Here is the recipe for how the vegetables are prepared at the Blue Bayou. Vegetables vary from entree to entree, but the preparation is the same. Fresh Vegetables Bayou 5 oz yellow squash 4 oz julienne carrots 5 oz julienne zucchini 2 oz julienne red peppers 1 oz slice shallots 1/2 Lawrey's seasoned salt 4 oz margarine Sweat shallots in margarine; add red peppers and saute for 2 minutes. Add par cooked carrots, zucchini and squash. Sprinkle with seasoned salt. Enjoy!
